Fast nettle soup

Products for 6 portions:
- Nettle – 500g.
- Fresh onion – 1 half a bunch
- Carrot – one
- Potato – one
- Parsnip – one
- Tomatoes – 3 tablespoons canned juice
- Salt - 1 tablespoon
- Oil – 3 tablespoon
- Dill – half a bunch
- Chick-peas – 70g
How to make it:
Wash and chop all the vegetables, but the potato. Wash the potato, but don’t chop it. Choose your favorite pot. Put the whole potato and all the veggies in, but for he nettle and the tomatoes. They will be added after. Cover with 3-4 cups of water and boil it.
After 30 minutes add the nettle, the salt, the tomatoes and the chick-peas. Take out the potato and smash it with a fork, then bring it back into the soup.
Leave it to boil for another 30 minutes. Then serve with some chopped dill and a smile!

Luchnik (Onion bread)

Ingredients
- Flour – 2 cups
- Fresh onion – 3-4 midium sized onion
- Salt – 1 teaspoon
- Baking soda – ½ teaspoon
- Oil – ½ cup
- Red pepper – 1 teaspoon
- Dill - half a bunch
- Parsley – half a bunch
- Mint – couple of stalks
Directions
Knead a dough from the flour, soda, oil, part of the salt and water, then let it rest for a while.
In a bowl mix the chopped dill, onion, mint, parsley, red pepper and the salt that is left. After the dough has rested, roll it out into a thick sheet. Cover half of the dough evenely with the filling. The other half use to cover the filling. Press the end in and make sure it is closed tight.
Finally sprinkle some oil on top and place it in an oiled tin. Bake in a preheated oven, until its crust becomes crispy and light brown.

Ritual bread for Blagoveshtenie

Ingrediants:
- Flour – 1kg
- Milk – 300ml
- Half paket of yeast
- Walnuts – 50 gr
- Dried fruits – 50 gr
- Sugar – 10 gr
Directions:
Dissolve the yeast in water, flour, sugar and let it rise. Then add it to previously sifted out flour. Slowly stir in small quantities of warm milk, until the dough chases the spoon around the bow. You do not need to use up all the flour called for in this recipe, or you may need more flour than called for. Turn dough out onto floured board and knead, adding small spoonfuls of flour as needed, until the dough is soft and smooth, not sticky to the touch. When ready put it in an oiled tin, turn dough over so that the top of dough is greased. Cover and let rise in warm spot. When ready, decorate the bread with dried fruits and walnuts.
Bake it at a medium heat. Few minutes before you take it out , sprinkle some sugared water and bake for another few minutes.
Stuffed trout

Ingredients for one portion:
- One medium size trout
- Bacon - 0,100kg
- Onion - 0,100kg
- Fresh marjoram – half a bunch
- Flour, Oil, Salt and Pepper
Directions:
Wash trout and dry it. Flavour the fish with sea salt and pepper. Cut half of the bacon in stripes. Chopp some onions and fresh marjoram. Mix well and use it as a stuffing for the trouts. Then wrap the trouts in the rest of the bacon strips ( as shown on the photo). Roll it into flour and fry it in hot oil untill ready.
I would suggest you garnish it with stewed potatos or vegetables.
